The Quick Run-Down
Chimayo Grill is a quick-service, fast-casual restaurant - not authentic Mexican but Coastal Mexican. Basically, you get in line, make some choices for your burrito, tacos, etc., pay and enjoy!
Summit County locals all agree that Chimayo is most notable for their epic Fish Tacos, Shrimp Tacos, and Chile Rellenos. Of course, Baja-style [hand breaded & fried] is the way to go for the fish and shrimp, but grilled versions of both are also available. Chile Rellenos are handmade in-house daily and deep-fried to order - perfect chopped up and rolled into any burrito.
Catering
We cater office lunches, small events, festivals, rehearsal dinners, weddings, and more. From burritos to tacos, it's done! From casual to formal, we got it down!
